5 Frozen chicken
breast- thaw slightly- cut into strips (5 or 6). Let thaw
completely
½ - ¾ cup flour
1 pkg taco
seasoning
1 can chopped
green chiles drained (7 oz )
1 cup shredded
cheddar cheese
½ cup shredded
pepper jack cheese
2 plus cups
picante sauce or mild salsa
Cut chicken
breasts into small strips. Mix flour and taco seasoning together and
dredge chicken strips in this mixture. Using equal parts oil/margarine,
brown chicken strips on both sides. Prepare casserole dish with ½ cup of
picante or salsa in bottom of dish, layer chicken, chiles and both types
of cheeses. Use remainder of sauce and cheese on top of dish. Bake at
350 for 30 minutes, covered.
(Can make in
microwave, however, cook chicken in frying pan a little longer.)
